Chewy Granola Bars

Made with Once Again Peanut Butter, crunchy slivered almonds, tart dried cherries, and sweet chocolate chips, these are bars are packed with wholesome ingredients that provide powerful flavor. Can be made as a nutrition bar, quick breakfast treat or afternoon pick-me-up snack.

Ingredients

  • 1097g  rolled oats
  • 585g    slivered almonds
  • 110g    water
  • 219g    corn syrup
  • 614g    honey
  • 878g    Once Again Peanut Butter
  • 366g    brown sugar
  • 20g      ground cinnamon
  • 15g      kosher salt
  • 293g    dried cherries
  • 219g    raisins
  • 295g    chocolate chips
  • 132g    puffed rice

Topping

  • 200g    chocolate chips

Directions

  1. Toast oats and nuts at 350F until lightly toasted, about 8-10 minutes.
  2. Line a full sheet tray with parchment paper and a pan extender.
  3. Combine the water, corn syrup, honey, peanut butter, brown sugar, cinnamon and salt in a saucepan over medium heat. Cook, stirring occasionally until the mixture is bubbling and the sugar is completely dissolved.
  4. Combine the peanut butter mixture with the oats and almonds. Mix well. Let cool about 10 minutes until just barely warm to the touch, and then add the dried fruits, chocolate chips and puffed rice. Stir to combine.
  5. Transfer the mixture to the prepared pan and firmly press the mixture into the pan.
  6. Scatter the remaining 2 tablespoons of chocolate chips over the pressed granola mixture, and gently press them into the top. Cover and refrigerate for at least 60 minutes before cutting bars into desired size. Store granola bars at room temperature individually wrapped for up to 7 days.
