Yield: 16 cups popcorn

Ingredients:

  • 16 cups plain popcorn, popped
  • 200 g salted, roasted peanuts
  • 30 g soy sauce
  • 60 g red curry paste
  • 200 g light brown sugar
  • 1 g cayenne pepper
  • 1 g paprika
  • 60 g Once Again Creamy Peanut Butter, unsweetened
  • Popcorn salt, for serving
  • Lime zest from two limes, for serving


Directions:

  • Make the Red Curry Peanut Caramel: In a saucepan, combine soy sauce, red curry paste, brown sugar, cayenne and paprika. Bring to a bowl over medium heat and cook to 240 °F. Remove from heat and stir in peanut butter.
  • Finish and Bake the Popcorn: In a large bowl, toss popcorn, peanuts and caramel together. Spread mixture onto lined sheet trays and bake at 250 °F for 25 minutes. Stir popcorn halfway through. Remove popcorn and toss with popcorn salt and lime zest.
