
Red Curry Peanut Caramel Popcorn

Yield: 16 cups popcorn
Ingredients:
- 16 cups plain popcorn, popped
- 200 g salted, roasted peanuts
- 30 g soy sauce
- 60 g red curry paste
- 200 g light brown sugar
- 1 g cayenne pepper
- 1 g paprika
- 60 g Once Again Creamy Peanut Butter, unsweetened
- Popcorn salt, for serving
- Lime zest from two limes, for serving
Directions:
- Make the Red Curry Peanut Caramel: In a saucepan, combine soy sauce, red curry paste, brown sugar, cayenne and paprika. Bring to a bowl over medium heat and cook to 240 °F. Remove from heat and stir in peanut butter.
- Finish and Bake the Popcorn: In a large bowl, toss popcorn, peanuts and caramel together. Spread mixture onto lined sheet trays and bake at 250 °F for 25 minutes. Stir popcorn halfway through. Remove popcorn and toss with popcorn salt and lime zest.
