Yield: 1 quart pea pesto, 32 crostini

Ingredients:

  • 750 g sweet green peas, fresh or frozen and thawed
  • 150 g Once Again unsweetened and lightly toasted, creamy almond butter
  • 10 g garlic clove
  • 10 g kosher salt
  • 130 g grapeseed oil
  • 40 g grated parmesan
  • 32 pieces of prepared crostini
  • 6 oz prosciutto, for serving
  • Fresh herbs or micro greens, for serving


Directions

  • Make the Pea Pesto: In a processor, combine peas, almond butter, garlic, salt, oil and parmesan. Pulse until desired consistency is reached. Use pesto immediately or store in the refrigerator for up to 4 days.
  • Make the Crispy Prosciutto: Arrange prosciutto slices on a rack-lined tray and bake at 400 °F for 12-15minutes. Let cool completely and break into bite size pieces.
  • Assemble the Crostini: Spread two tablespoons of pesto on each prepared crostini, top with herbs and prosciutto.
