
Crunchy Peanut Butter and Strawberry Granola Bars

Ingredients:
Granola Bar Ingredients
- 1060 g rolled oats
- 360 g roasted salted peanuts
- 140 g freeze-dried strawberries, plus more for sprinkling
- 120 g neutral oil, such as grapeseed or canola
- 480 g light corn syrup
- 640 g light brown sugar
- 12 g fine sea salt
- 16 g vanilla extract
- 480 g Once Again Peanut Butter, unsweetened, creamy
Glaze Ingredients
- 85 g powdered sugar
- 18-20 g milk
- 2 g vanilla extract
Directions:
Toast the Oats and Prepare the Ingredients: Toast the oats on a sheet tray at 350°F for 8-10 minutes. Combine peanuts and freeze-dried strawberries. Bring oil, corn syrup and brown sugar to a simmer. Continue to cook until sugar is dissolved. Remove from heat. Stir in salt, vanilla and peanut butter.
Combine Ingredients and Bake: Quickly combine warm oats, peanuts, freeze-dried strawberries and hot syrup. Press mixture into a parchment-lined full sheet tray with a pan extender. Bake bars at 225°F convection for 20-25 minutes. Remove the bars from the oven and score to desired size while still warm. Finish cutting once bars have completely cooled.
Make the Glaze and finish the Bars: Combine glaze ingredients. Spoon or pipe over cooled granola bars.
